How to use a refractometer

  1. Calibrate with distilled water so it reads 0 Brix.
  2. Place a few drops of clear juice or must on the prism.
  3. Close the cover plate so the sample spreads evenly.
  4. Point it toward a bright light and read the Brix line.
  5. Clean and dry the prism after each reading.

What the readings mean

Brix estimates grams of sugar per 100 grams of liquid. A reading around 20 to 24 Brix is common for many wine musts. Higher Brix generally means more potential alcohol, assuming the yeast can finish fermentation.

Once fermentation has started, alcohol bends light differently, so a refractometer reading needs correction. For active fermentation, confirm progress with a hydrometer or use a refractometer correction formula.
